Follow this step by step guide to create an easy roast chicken dinner for the family and turn the leftovers into a delicious healing bone broth. No wastage and tonnes of nutrients!
I always recommend bone broth for those who can tolerate it. This is for healing and sealing of the gut wall, which improves nutrient absorption.
Can you buy it in a jar? Yes! Is it as good? No way!
Roast Chicken Dinner
Ingredients:
- 3 cups of chunky cut roast vegetables of choice. sweet potato, potato, turnips, parsnips, carrots
- 1 whole or butterflied organic chicken
- 1 large onion
- 5 cloves garlic, skin on
- 4 tablespoons butter
- 1 tablespoon salt
- 1 teaspoon paprika
- 1 teaspoon pepper
Method:
- In a large oven safe dish, layer the chopped root vegetables, onion and garlic as shown below. (Please note I recommend Solidteknics as the roasting pan, if you are wanting to move away from toxic coatings that can play havoc with your health & hormones.)
- Place the chicken on top of the vegetable layer and prepare the skin. Simply, lift the skin layer with a spoon or knife and put wedges of butter in and under the chicken skin. Then on top of the skin season with salt, pepper, paprika and any herbs you would like.
- Place roast in the oven at 180 degrees fan forced for approximately 90 minutes this time is for a 1.6kg butterfly cut chicken.
- Serve with a salad to accompany the roast vegetables and keep all leftovers including bones, skin, vegetables and juices.
Healing Bone Broth
Ingredients:
- Leftover roast bones, vegetables and juices
- 1 packet of organic drumsticks or chicken feet for extra gelatine
- 3 tablespoons of apple cider vinegar
- 1 bayleaf
- 1 bunch celery tops
- 1 whole onion
- 2 cloves garlic
- Any vegetables can be put in the healing bone broth. Use what you have and definitely use organic or refer to our reference of the Clean Fifteen & Dirty Dozen.
Method:
- Place all the left over bones in the slow cooker along with all the above listed ingredients.
- Cover with filtered water and leave on low for up to 24hours. If you do not have any issues with histamines the 24hrs of cooking is perfect. You can enjoy direct from the slow cooker from the 8hr mark onwards and if you have histamine intolerance don’t cook beyond 12hrs.
- Once cooked and cooled strain the liquid from the bones.
- Place in freezable containers. If not freezing it will last 3 days in the fridge or up to 3 months in the freezer.
- To enjoy prior to a meal for healing and sealing the intestinal wall, heat in a saucepan (never a microwave) with a little butter and season with salt and pepper.
