This is an amazing healthy recipe full of fermented goodness!
Ingredients:
- 1 whole organic pineapple
- 1 cup organic raw sugar
- Filtered water
- Fermenting Crock or large glass bottle
Method:
- Peel & core one whole pineapple. Set the meat aside, to eat separately & keep everything else except for the top.
- Dissolve 1 cup of sugar in 3 cups boiling water then allow mix to cool to room temperature.
- Add the dissolved sugar mix, 3 additional cups of water as well as the pineapple peels and core into the crock. Mix the contents gently to combine.
- Place the fermenting crock weights on top of the mix to keep the peels below the water line. Then place the lid on top & fill the mote with water. If using a glass jar instead you will need river rocks/small jar/shot glass to hold the contents below the water line & cover the jar with a muslin cloth.
- Ferment on your bench top for 1-2 days to taste.
- Decant the contents to separate the liquid from the peels. Bottle the liquid in a flip top bottle, then seal & ferment on your bench top for another 2 days.
- Refrigerate & drink tepache straight or add it to soda water to dilute.
