This is the perfect warming meal, packed with nutrients. Our kids love this for breakfast or even a cheeky dinner. Leftovers I pack in their lunchboxes with no complaints! Play with the ingredients and textures, I go chunky but you can definitely do mushy if that is your preference. Ingredients
Crumb:
- 50 grams of cultured butter
- 1/2 cup of organic oats
- 1/2 cup organic shredded coconut
- 1/4 cup organic activated sunflower seeds
- 1/4 cup organic chia seeds
- 1 teaspoon of cinnamon
Apple, Pear, & Berry Base:
- 3 apples cored and chopped roughly
- 2 pears cored and chopped roughly
- 75mls of home made bone broth
- 1/2 cup of organic frozen wild blueberries
- 1 teaspoon of cinnamon
- 1 tablespoon of cultured butter
Method
- Heat oven to 180 degrees or 160 degrees fan forced
- In a saucepan on medium heat add the apple, pear, berry base ingredients except the blueberries. Cook till the apples are heated through stirring occasionally. Prolong this cooking time if you would like a softer texture. If using a Thermomix instead of a saucepan heat for 6 minutes, 100 degrees, soft speed
- Add the frozen blueberries or mixed berries and stir through
- Place in an oven proof glass or ceramic dish and set aside
- Add all the crumb ingredients into a blender or Thermomix and blitz to your liking of texture. With the Thermomix I do 20 seconds speed 8
- Place the crumb on top of the set aside apple, pear and berry base
- Place in pre heated oven for 15 minutes
- Serve with a scoop of full fat cream or coconut cream
Recipe Tips & Adaptions
*Any nuts and seed mix will work but for it to be lunchbox safe I don’t use nuts.
*Oats have a higher glycemic index so if following my protocol you will need to use more seed or nut meal.
*Green apples have less sugar so if following my protocols, only green apples, no pears and just blueberries.
*For a sweet touch you can add maple syrup to the toping prior to cooking or as you serve.
* For a VEGAN just use water as apposed to bone broth in the base and add hemp seeds for protein in the crumb. Use coconut oil instead of butter using the same quantities.
