This is a great pancake recipe for those following a gluten-free or paleo lifestyle.
Ingredients:
- 70g or 1/4 cup of Cassava Flour
- 100ml milk of choice
- 1 teaspoon baking powder
- 1 teaspoon coconut sugar, honey or maple syrup (optional)
- 1 tablespoon collagen
- 3 eggs
Method:
- Preheat oven to 200 degrees celsius.
- While oven is heating, melt approximately 3 tablespoons of butter in a ovenproof frying pan.
- Mix all ingredients together in a large bowl until your reach a batter-like consistency with no lumps. If using a Thermomix blend speed 6 for 15 seconds.
- Pour batter into the hot butter pan and bake in the oven for 15 minutes. Pancake will appear golden when ready. It is normal for the mixture to rise in the oven, but it will quickly drop when served.
- Serve with fresh fruit and a dollop of cream, labneh or yoghurt. Can be created as a sweet or savoury variation.
